Chile Garlic Noodles

This noodle stir fry is an easy meal that you can quickly throw together at the end of a long day. It only takes about 30 minutes to prepare and is a great use of veggies you already have in your fridge. If you don't have all the veggies in the recipe be adventurous and subsitute what you have. This is simply what I had in the fridge that needed to be used.

Instructions:

  1. Whisk together the soy sauce, garlic, brown sugar, red chile powder, and ginger in a small bowl
  2. Cook the spaghetti according to the instructions
  3. Slice the zucchini, bell pepper, babby carrots, onion, asparagus, and mushrooms
  4. In a large skillet cook the bell pepper, carrots, onion, and asparagus over medium/high heat for ~5 minutes until the onions start to soften
  5. Add the zucchini and mushrooms and cook for ~3 more minutes
  6. Add the soy sauce mixture to the veggies, stir to coat, and remove from the heat
  7. When the pasta is fully cook mix the drained pasta in with the veggie mixture and serve
